Spelt Banana Walnut Bread

This bread is dense, moist and delicious. I enjoy it with homemade hot chocolate. Organic ingredients are the best option but please start where you are and use what you have. Enjoy !!! ☺

  • Large glass, ceramic or stainless steel mixing bowl
  • Whisk or wooden spoon
  • 9 x 5 loaf baking pan
  • Knife
  • Blender
  • Wooden cutting board
  • Measuring spoons and cup

4 cups of organic sprouted whole grain spelt flour (you can also use regular spelt flour if you cannot find it sprouted)

1 1/2 teaspoon baking soda

1/2 teaspoon Himalayan seasalt

2 cups milk 1 cup organic sugar (you can substitute with sweetener of choice)

2 ripe organic bananas (skin has some black or brown color)

1/2 cup organic walnuts

1/4 teaspoon pure vanilla extract

(Coconut oil or grassfed butter to grease loaf pan)

  1. Preheat oven to 350 degrees
  2. Grease your 9 x 5 loaf baking pan (I use a ceramic pan that does not need to be greased so I skip this step)
  3. Mix all dry ingredients (except the walnuts) into mixing bowl
  4. Combine milk, sugar, 1 1/2 bananas and vanilla extract in blender and mix completely, pour into mixing bowl and combine completely with a whisk or wooden spoon
  5. Cut six thin coin sized circles from remaining half of banana and set aside
  6. Cut up what’s left of the banana into tiny cubes and stir into the batter
  7. Set aside 6 of the walnuts and stir the remaining into the batter
  8.  Pour batter into your loaf pan
  9. Decorate the top of the batter with the banana coins and walnuts you previously set aside
  10. Place in oven and bake for 60 – 70 minutes (I use a knife to pierce the center to check that it is fully cooked – the knife should be free of any uncooked batter when you pull it out)
  11. Allow to cool on baking rack.
  12. Enjoy !!!
